Kulich – Russian Easter bread

I have been baking, but I took an already ‘healthy’ chocolate avocado cake recipe and tried to make it healthier. I’m not going to inflict it on you.

I have the ingredients to make the Chocolate Rose cupcakes from Home Sweet Home but I am somewhat lacking in weekends and evenings to make them. Mr B and I are off on Easter holidays soon and I’ve got a small matter of 2 Half Marathons and 2 Marathons coming up in the next month. I appreciate that for those of you who love running about as much as you love finding that you have run out of eggs, this will be rather tiresome. Sorry.

I did bake this weekend though. I made Kulich. It’s Russian bread which tastes like a cardamom-y version of a Hot Cross Bun. They make it for easter and cover it in icing and brightly coloured sprinkles, oh and they bake it in empty food tins. Who knew that Russia was doing the whole baking in weird receptacles thing way ahead of the gastro-pubs of the uk?

    That looks so cute. I bet in Russia they used whatever they could get their hands on to bake in.
