Home Sweet Home Bakealong 44: Peanut Butter and Jam Pinwheel Cookies
Beckie made these while I was away on holiday and noted that they were not as peanutty as she would have liked. So I decided to see if I could rectify the situation by putting more peanut butter and less normal butter in the dough. I’m not sure if it was this amendment of the fact that I didn’t chill them overnight, but when rolling them out the were cracking all over then place. So, not a very pretty pinwheel. Rather shameful in fact.

These are at the harder end of the cookie spectrum. No chewy middles here. I also thought that the amount of jam allowed for the middle was rather miserly but when I tried to use more it just squidged out anyway. I like the Idea of PB&J cookies but I think there’s probably a better way to achieve them.

Peanut Butter and Jam Pinwheel Cookies

Ingredients
60g smooth raspberry jam (I used strawberry, because that is what i had in the cupboard)
1 tsp cornflour
100g unsalted butter, softened
100g smooth peanut butter
180g caster sugar
1 large egg
2 tbsp whole milk
340g plain flour
1/2 tsp bicarbonate of soda
1/4 tsp of salt
