Bother, no Buckwheat – Gluten Free Chocolate Chip Cookies

I thought I was going to make Buckwheat cookies.

Not a buck or a wheat in sight

I thought I had buckwheat flour. I didn’t I had spelt flour. Spelt is not gluten free.

And so this recipe was born as I realised halfway through that buckwheat probably works differently to gluten free flour mix and gluten free flour works differently to normal flour. So here’s a mashup of a couple of buckwheat and non-buckwheat cookie recipes that turned out to be really rather good crunchy gluten free choc chip cookies. I name them Bother, No Buckwheat Cookies.

Bother, no Buckwheat Gluten Free Choc Chip Cookies

Makes about 20ish? I forgot to count. Sorry

113g butter
150g brown sugar
1 egg beaten
225g plain white gluten free flour (I used DovesFarm)
1/2 tsp vanilla essence
1/2tsp bicarbonate of soda
100g chocolate chopped into chunks

Preheat oven to 190c
Cream the butter and sugar together.
Slowly add the egg and vanilla essence in.
When combined beat in the flour and bicarb.
Finally stir in the chocolate chips.

Make into little golfballs and place on a greased baking tray.
They will spread to be about 10cm diameter.
Bake for 10-15 mins.
Because they are gluten free they need to look a bit darker than you’d normally go for with a cookie. If you take them out too early they don’t so the “gooey cookie thing” they just crumble.
Don’t be tempted to lift them until they’ve cooled.
