All Natural, All Family, Fat Free Breakfast Muffins
No, they don’t taste horrible.
Be honest – that’s what you were thinking. Sweet parsnip (or apple if you’re a ‘snip hater) that goes crisp around the edges and raisins that have plumped up from surrounding moisture make for a good muffin. I have no idea about the calories, RDA’s or anything like that but I can tell you that they don’t have any added fat and the sugar is natural. Take that, January.
All Natural, All Family, Fat Free Breakfast Muffins
70g parsnip, grated (one small one) (can be swapped out for apple)
150g pot of fat free Greek yoghurt
2 egg whites
1 small banana
2 tsp honey (optional)
375g muesli (I used whole wheat fruit and nut, you could use gluten free or whatever you have)
