Breakfast Muffins for Mini Ones

A few months ago Mr B and I went to Bournemouth for a long weekend to celebrate my mother-in-law’s retirement. She has more than earned it after years of cheerfully coping with some very stroppy teenagers and the even stroppier education system. It was a lovely weekend, and the only sunny one in a run of soggy weeks.

J offered to cook us all breakfast one day. “All” this case was J, A, 10month old daughter, M-I-L, F-I-L, Aunty-I-L, Uncle-I-L, Mr B and Me. That’s brave. That’s 9 people with varied food preferences and varied appetites. Yet, J managed to make breakfast pancakes that everyone including the baby and yet they tasted amazing and not baby-food like at all. The recipe came from Mama Cook – a blog devoted to cooking things  that are suitable even for babies and toddlers to eat.

So, fast forward a few months – J was coming to visit and we were also off to see a friend with a crawler, so I thought I’d bake some treats for the wee ones. I found this recipe for breakfast muffins on Mama Cooks. The kids loved them and I’ve been eating them for breakfast too! As with the pancakes, Mama Cook has made something that is low in salt and sugar, full of goodness, easy to make and tastes great. They are also really portable as they are quite sturdy in texture. I’ll be making these again just for me.

Breakfast Muffins
(suitable for babies and toddlers but great for grownups)

1 egg
75ml apple juice
1 tbsp oil (chose something flavourless like rapeseed or sunflower)
50g, 1.5oz grated apple (approx half an apple)
1 ripe banana, mashed
1 tbsp honey
1 tsp vanilla extract
100g, 3.5oz self raising flour
30g, 1oz porridge oats plus an extra 1tbsp to sprinkle
1 tsp baking powder
1 tsp cinnamon
90g, 3oz sultanas (golden raisins)
