Blackberry and Nutella Dacquoise – GBBO technical bake 8
I’m specialising in “technical bake made simple”. I know a dacquoise should have a creme mousseline and be iced all the way around but I wasn’t going to manage that and it would have been too rich for a mid-week munch. So, this is my down-beat dacquoise.

Lovely layers
Blackberry and Nutella Dacquoise
5 egg whites
150g caster sugar
Pinch salt
1 tsp white wine vinegar
90g ground almonds
360g icing sugar
180g unsalted butter
2 tbsp nutella
small punnet of blackberries
This amount will make enough for a dinner plate sized dacquoise, I made lots of mini ones to allow for error.

Who need mousseline when you’ve got nutella?
Beat the egg whites until soft peaks
Continue beating while gradually adding the sugar, salt and vinegar under stiff and glossy.
Split the mixture into two bowls 2/3rds and 1/3rd.
Fold the almonds into the 2/3rds.
Spoon the mixutre into piping bags and pipe snake like rounds out of each kind or meringue onto baking paper
Bake at 170C for about 25mins or under golden and firm.
Beat the butter and icing sugar together until really pale and fluffy. Then beat the nutella in.
Pipe the icing between the layers, putting a row of blackberries around the edge and in the middle (depending on how much you like fruit – I had fruit refusers to think about)
