Chocolate Chip Mini Muffin Moments
Aaah the Random Recipes challenge, that fickle mistress. Sometimes it gives us obscurities (Pea and Lovage soup) and sometimes it gives us comfort blankets. This month I lucked out with a classic recipe for mini choc chip muffins. Even better was the fact that I was due to go on the Euston Church weekend away and had agreed to make a load of cakes for our coffee breaks – so these were ideal.

The theme for March is cuttings, memories and clippings so I turned to my rather sticky and messy recipe folder (I have a nice one that I just haven’t got around to transferring everything to – must do that) and put my hand into it…

Mini Muffin Moments chosen by the random number generator
Page 9 : “Mini Muffin Moments” otherwise known to normal people as choc chip muffins. A really useful recipe to have in your repertoire.
Mini Muffin Moments
11og butter
65g golden caster sugar
2 free range eggs
110g plain white flour
1 1/2 tsp baking powder
handful of chocolate chips [I added some toffee chips too]
I put 1tsp Nielsen Massey vanilla extract
Preheat oven to 200c / Gas 6
Cream butter and sugar until fluffy and pale
Slowly add the eggs and mix for three minutes [this is what the book says!]
Add the flour, baking powder and chocolate chips and stir well until fully combined [I folded the flour and baking powder in first]
Place a spoonful of mixture into each mini muffin case, filling each to just over half way. Makes about 25.
Bake for 20 minutes or until golden on top.
Leave to cool for 5 minutes before removing from the tin.

Muffins are one of my favorite things to bake – in fact I make and post one every Monday for Muffin Monday – because they are so simple but make people so happy. I imagine these muffins went over a treat at the church weekend coffee breaks. I love the addition of toffee chips too. Yum!
