Oat, seed and fruit cookies

A couple of days later, a text from Bunmi to P-B  “did you get the book? Look forward to seeing some of the recipes in your adventures”
Hurrah! It was meant for me! It turns out that Bunmi (her of the amazingly perfect private caterers Budding Tastes – those pictures make me feel so inferior) had very kindly brought me back a recipe book  from her recent trip to Nashville. A week or so later I was reunited with the book. It is full of deliciously OTT American goodies such as Honey Chess Pie, Root Beer Float Cake, Brown Betty and the intriguing Chocolate Mashed Potato Cake.

I can’t wait to try loads of the recipes, though I’ll have to work out some UK substitutions and measurements. In the meantime, my kitchen aid was twitching with impatience, so I thought I’d use what was in my cupboard and adapt a recipe from the book. Loveless Cafe make a big deal of the “secret ingredient” in their oatmeal cookies with dried peaches….which is dried peaches (not so secret then?). Well, I didn’t have dried peaches so instead you have the second muesli recipe of the week.  I am so pleased with how these turned out. They are excellent mid-morning biscuits and have been very well received even by oatmeal doubters (weirdos).

Cookies for breakfast perchance?

Oat, seed and fruit cookies (aka muesli cookies)
adapted from Oatmeal cookies with dried peaches from Desserts from the Loveless Cafe

Makes about 24 cookies

1 1/4 cups plain flour [I think this is 155g [but used cups to measure mine]
1 1/3 cups of muesli with seeds and dried fruit – I used Aldi’s extremely exotic as I like the cranberries [I think this is 120g but used cups to measure mine]
1 tsp bicarbonate of soda
1/2 tsp ground cinnamon
115g butter
1 tbsp of syrup from a jar of stem ginger in syrup that was lurking in the fridge [you could use 2 tbsp of honey, or golden syrup]
1 tbsp of honey [I used ginger honey]
1 tsp vanilla bean paste or good vanilla essence
1 egg

Heat oven to 175c / 350f
Cream the butter, sugar, syrup, honey and vanilla until light and fluffy [don’t do like i did and put the sugar in with the oats and then have to “rescue” what you could…still, didn’t do any harm! Ah the hapless Pigling Bland]
Beat in the egg and then add the flour, oats, baking soda and cinnamon until everything is mixed together.
Use a teaspoon and your hands to make golf ball sized cookies. Place on a baking tray leaving a little space around them, though they don’t spread loads.
Bake for 15mins or until just turning golden. Don’t be tempted to over bake them. You want a chewy centre as they go pretty hard on the outside
