Baked Sweet Potato with Leek and Gorgonzola – Random Recipe #14

This month’s Random Recipe challenge was chosen by Chocolette to go to your 17th recipe book on the shelf and make whatever it falls open at.

Baked sweet potato with leeks and gorgonzola

Given that I had packed most things when I made this, I think I lucked out. The “recipe” comes from 400 Three and Four Ingredient Recipes by Joanna Farrow and Jenny White which I got for £4 in WHSmith and have not actually made anything from..until now (thanks Dom).

It’s not so much a recipe as an assembling, but it’s a great lunch to eat sat amid cardboard boxes.

Serves 1
1 Sweet potato
1 leek + a little butter / oil
Some gorgonzola

Bake your sweet potato in half
While it’s baked sauté some leeks in a little butter
Place the leeks on the potato and crumble gorgonzola over the top
Pop under the grill until the cheese is bubbling.

    I haven’t had baked sweet potato for ages so I might have this for my lunch this week – with a different cheese though!
