Baby cakes (Vanilla cupcakes with lemon icing)
It’s my colleague Laura’s last day today before she starts maternity leave. She’ll be missed at work but I think she’s ready to go and have a bit of a sit-down before the mayhem begins.
So, to say good-bye and wish her well I thought I’d make some blue and pink cupcakes (they don’t know what the sex of the baby is).
The vanilla cake recipe is lifted from the Violet Beauregard cakes at I Heart Cupcakes so I won’t post it, just to make sure you go and look at the lovely Blueberry cakes there.
The frosting is just the Primrose Bakery one below
Lemon Buttercream Icing
11og Unsalted butter
2 Tbsp lemon juice
Grated zest of 2 lemons
500g Icing sugar
Method
Beat butter lemon juice, zest and half icing sugar together until smooth (may take a while)
Gradually add rest of icing sugar and beat again until smooth, creamy and fluffy
If in doubt, beat some more.
