Festive Fig Fondants

My December recipe for Rangemaster is now live and this month I bring you festive fig fondants. They are a good alternative to Christmas pudding as they can be made ahead of time – the take about 15min to cook and can even cooked from frozen  AND they keep up your fruit intake Christmas.

Festive Fig Fondant

At the risk of sounding self congratulatory, these are really really good. Normally after baking something I feel so emerged in the flavour that I don’t actually want to eat any of it. These on the other hand, I had to put out of sight to stop me eating them.

Festive Fig Fondants

 

Makes 6

2 eggs
2 egg yolks
120g caster sugar
2 tbsp plain flour
120g butter
120g dark chocolate
1 tsp cinnamon
1 tsp ginger
½ tsp grated nutmeg
Pinch of allspice
6 figs, stalks cut off
Dried cranberries (could be soaked in booze if you so desire)
Cocoa powder for dusting the ramekins/teacups
Butter for greasing
6 discs of greaseproof paper for the bottom of each ramekin/ teacup
