Honey, lemon and thyme pancake stacks

Exciting news! After my pre-Christmas series for Rangemaster, they have asked me to write a monthly blog post for them.

The first one is, predictably, pancake based (Shrove Tuesday is on February 12th). The pairing of lemon and thyme was inspired by an amazing macaron I had at Ladureé last summer – not that I come close to the perfect balance of that delicious morsel, but I can aspire.  You can find the full recipe and some snow-based meanderings here. They are a lovely change for Shrove Tuesday without drifting too far from tradition.
